Position summary:

What are responsibilities of a server?

– A server attends to his/her guests by providing them with a memorable “Ambar” experience and ensuring they leave the restaurant entirely satisfied.

How will a server accomplish these responsibilities?

– By attending to guests with a unique and personalized approach, all the while maintaining a positive attitude.

Why are they accomplished in this manner?

–Because a server understands that hospitality is more than the food and beverage on the table, it is the provided restaurant experience that makes the guest want to come back, and because the server enjoys his job.

Duties and responsibilities:

  • Full knowledge and understanding of entire menu, including ingredients and how food items are served.
  • Full knowledge of Ambar’s bar and wine list.
  • Prepares tables within his/her section with special attention to sanitation. Sets up napkins, service plates, utensils and tables according to reservations and number of guests.
  • Greets and attends to guests upon arrival to their table.
  • Presents Ambar’s concept and menu.
  • Takes orders and helps guests select food/beverages.
  • Coordinates and closely collaborates with the food runner in the delivery of the food.
  • Assists food runners and bussers by polishing glasses and silverware, serving and up-serving guests.

FOOD RUNNER

Position summary:

What are responsibilities of a food runner?

– Ensures that food is delivered to the table at its best, allowing guests to enjoy its authentic taste.

How will a food runner accomplish these responsibilities?

– By understanding the importance of team work and the speed of walking through the restaurant , with support and guidance from kitchen and floor staff.

Why are they accomplished in this manner?

– Because the food runner is aware that enjoying the taste of food completes a guest's experience and that the food runner plays an important role in the delivery of this experience.

Duties and responsibilities:

  • Transfer food from kitchen to guest, describe food if requested.
  • Prepare and organize appropriate cutlery and plates at expo station in the kitchen
  • Maintain a clean and organized expo station
  • Provide assistance at expo station if the chef is absent
  • Provide assistance to guests when needed (new cutlery, questions regarding food)
  • Serve, clean, and organize during service, if necessary.

Position summary:

What are responsibilities of a busser?

– Provides a strong foundation for fast and well-organized service that reaches the highest level of Ambar’s standard.

How will a busser accomplish these responsibilities?

– Understanding that effort, hard work and responsibility towards tasks leads to a common goal.

Why are they accomplished in this manner?

– Because a Busser is the link in the chain of good service and because he or she can see the next step in the progress towards the top of the pyramid.

Duties and responsibilities:

  • Clean tables and chairs
  • Set up tables with clean covers, plates, glasses, spreaders and candles.
  • Respond to guest requests.
  • Collect dirty cutlery and dishes from tables and carry them to wash station.
  • Serve, clean, organize during service, if necessary.

The ideal candidate should posses:

BARTENDER

Position summary:

What are responsibilities of a bartender?

– Bartender occupies the central spot in the restaurant, preparing interesting alcoholic and non-alcoholic beverages. He/she Interacts with guests, taking orders and serving snacks and drinks. His/her main objective is to provide a true Balkan experience by attending to customer’s needs with a unique approach.

How will a bartender accomplish these responsibilities? 

  • By assessing and attending to the needs of the guests all the while maintaining a courteous and positive attitude.

Why are they accomplished in this manner?

  • Because a bartender understands that hospitality is more than just the food and beverage at the bar, it is the provided bar experience that makes the guest want to come back, and because the bartender enjoys his job.

Duties and responsibilities:

  • Full knowledge of the bar program and wine list
  • Full knowledge of the menu, including ingredients and how food items are served.
  • Sets up bar for opening
  • Opens all work stations
  • Checks bar supplies and inventory
  • Collaborates closely and assists bar back with setup
  • Presents restaurant’s concept to guests
  • Takes orders from guests and recommends food/beverage items when necessary.
  • Sets up bar for closing
  • Maintains a clean and sanitary bar

BARBACK

Position summary:

What are responsibilities of a barback?

– Assists  bartender to provide guest with best possible service.

How will a barback accomplish these responsibilities?

– By understanding how important his role is in in maintaining a functioning bar.

Why are they accomplished in this manner?

– Because a Bar-back is the link in the chain of good service and because he or she can see the next step in the progress towards the top of the pyramid.

Duties and responsibilities:

  • Help set and ensure enough quantities of ice, spices, syrups, liqueurs and beers needed for the expected amount of work.
  • Make syrups and drinks for all orders.
  • During service, remove full trash bags and replace them with clean empty ones.
  • Assist bartenders by serving guests during busy hours.
  • Stock goods when they arrive to restaurant (when requested by shift leader).
  • Acquire  basic knowledge of the food and drink menu so that guests can be assisted when needed.

COOK

Position summary:

What are responsibilities of a cook?

Preparing Balkan food using modern methods. Preserving recipes from our grandmothers’ kitchens and creating a fresh take on classic culinary delights.

How will a cook accomplish these responsibilities?

By demonstrating his/her passion on a plate and in the way the food is served.

Why are they accomplished in this manner?

Because the ideal cook is aware and understands that ingredients are not  the only factors that create a delicious and memorable meal, energy and passion are just as important in the preparation process.

Duties and responsibilities:

  • Independently prepares and ensures great presentation of all meals  before they are served.
  • Checks the quality and quantity of meals.
  • Controls the consumption of food
  • Monitors inventory in the kitchen
  • Understands all aspects of the kitchen
  • Maintains the standard and integrity of every meal
  • Tests quality of all meals by ensuring great presentation and ideal temperature
  • Keeps a sanitized and orderly environment in the kitchen

KITCHEN ASSISTANT

Duties and responsibilities:

  • Maintains a clean and sanitary work station
  • Responsible for washing all inventory in the kitchen
  • Maintains the cleanliness of all floors, shelves, hoods, filters and ventilation
  • Responsible for inventory of all hygiene and cleaning products.
  • Ensures proper use of dish-washing machine.
  • Empties garbage bins on regular basis
  • Helps kitchen staff with duties (cleaning vegetables)
